Caloian – Cabernet Sauvignon

In stock

A wine of authority and confidence, the Caloian Cabernet Sauvignon is an embodiment of strength and finesse.

Part of the esteemed Caloian series from Crama Oprisor, this Cabernet Sauvignon is a tribute to the winery’s rich traditions. The Caloian serie is as we are accustomed to from Crama Oprisor, inspired by local traditions. The name Caloian refers to an ancient ritual practice where, on the third Tuesday after the Orthodox Easter, a clay or wooden doll is used: the Caloian. Boys and girls gather together and dance the traditional ‘hora’ dance late into the evening. Traditional instruments such as the flute and cimpoi (bagpipe) are often played, and songs are sung that call for rain and abundance.

Inspired by strength and determination, this wine reveals itself slowly, maintaining its rhythm only to unveil its full majesty eventually.

With deep notes of dark chocolate and dried fruit, and aromas reminiscent of freshly plowed, fertile and grassy earth, this wine is a combination of sturdy, satin-like textures. Its intense ruby color radiates a deep complexity. The aroma of black currants and dried plums invites exploration. The flavor is robust, powerful, and assertively bold, truly reflecting its character.

Serving suggestion
This Cabernet Sauvignon is an excellent companion to hearty meat dishes, particularly pork or beef, where it accentuates the complexity and richness of the meals.

The crushed grapes undergo cold soaking for quite some time before alcoholic fermentation takes place in stainless steel. The cold soaking produces a lot of aromatic substances, tannin and color. The must is stirred regularly during and after alcoholic fermentation. This creates a lot of flavor, creaminess and structure.
